This hands-on course incorporates knife skills, a mix of cooking techniques, and the wonderful chemistry of aromatic spices.  Perfect for entertaining with ease, as everything can be prepared ahead, leaving you time to relax with your friends.  Your menu is a mixed mezze of carrot and cumin salad with fresh coriander, aubergine with garlic, chilli and mint, a fresh herb salad, and cheese pastries, followed by a succulent lamb tajine with preserved lemon, finishing with stuffed apricots in rose syrup.
